The pan itself is good I have had no real problems with it. The silicone insert is another story though. I have a Silpat silicone mat which I love, it never sticks. I thought this silicone mat would be similar, I was very wrong. I have baked multiple things on this mat and everything sticks. I have to use lots of non-stick stray which totally defeats the purpose of the silicone insert. If your looking for a good pan this one will do the job, but if you want a non stick cooking surface...buy something else.

I've only baked cookies on this with the silicone mat and it is wonderful! First time I did 350F for 10 mins and another batch I did 375 for 9 mins, both batches came out great and plucked right off the silicone mat. I would understand if something more delicate were harder to get off, but cookies with a spatula after 2 mins of cooling were fine. I notice the silicone mat expands in the oven and contracts smaller when it cools so I think that might help with the nonstick aspect. It's a great size and fits in a conventional oven, I wish it were cheaper is all. I fit 15 cookies 5x3 if I drop in tablespoons.
